3-3.4kg Whole Turkey 

Timings: 

  1. 3kg: 2 hours 10 mins 

  1. 4kg: 2 hours 50 mins 

  1. 5kg: 3 hours 10 mins 

  1. 6kg: 3 hours 30 mins 

  1. 7kg: 3 hours 50 mins 

  1. Pre-heat to 180°C (fan) / 375°F / Gas Mark 5. 

  1. Cook, uncovered, in the centre of a pre-heated oven. After 1 hour, cover loosely with kitchen foil, ensuring foil is tucked under edges of roasting tin to keep moisture in. 

  1. Baste turkey occasionally during cooking process (typically 2-4 times depending on the size of the turkey). 

Poultry is cooked if the juices run clear when the deepest part of the turkey breast and leg are pierced with a thin skewer. If the juices are pink, continue cooking for a further 15 mins and retest. Repeat every 15 mins until juices run clear. 


Half Turkey Butterfly 

  1. Preheat the oven to 190°C / 170°C fan / gas 5. 

  1. Place your turkey on a roasting tray and put in the oven. Cook for 20 minutes per kg plus an extra 70 minutes. 

  1. Remove from the oven and cover. Rest for 15 minutes before slicing. 

Unsmoked Gammon 2kg 

  1. Preheat the oven to 180°C / 160°C fan / gas 4. 

  1. Place your gammon on a roasting tray and put in the oven. Cook for 85 minutes. 

  1. Remove from the oven and cover. Rest for 15 minutes before slicing. 


1.5KG Beef Topside 

  1. Preheat your oven to 215°C / 200°C fan 

  1. Massage a little goose fat into the joint if it doesn’t have a generous coating of fat and season to taste. 

  1. Place in the centre of the oven and roast for 20 minutes, then reduce the temperature to 180°C / 170°C fan. 

  1. Continue roasting for 15 minutes per 500g reaching a core temperature of minimum 56°C for a medium rare roast, or 30 minutes for a more well done roast. 

  1. Rest for a minimum of 20 minutes before carving, leaving the roasted vegetables in the tray for the gravy. 


800g Mini topside roasting joint 

  1. Preheat the oven to 190°C / 170°C fan / gas 5. 

  1. Place your beef on a roasting tray and put in the oven. Cook for 30-45 minutes depending on preference. 

  1. Remove from the oven and cover. Rest for 10 minutes before slicing. 

1.5kg-2kg Sirloin Roasting Joint 

  1. Preheat the oven to 190°C / 170°C fan / gas 5. 

  1. Place your beef on a roasting tray and put in the oven. Cook for 45-70 minutes depending on preference. 

  1. Remove from the oven and cover. Rest for 15 minutes before slicing. 


Pigs in Blankets 

  1. Preheat the oven to 180°C / 160°C fan / gas 4. 

  1. Place on a roasting tray and cook for 20-25 minutes ensuring that the meat is cooked through. 


Pork Chipolatas 

  1. Preheat the oven to 180°C / 160°C fan / gas 4. 

  1. Place on a roasting tray and cook for 20-25 minutes ensuring that the meat is cooked through. 


Meaty Pork Sausages 

  1. Preheat the oven to 180°C/ 160°C fan / gas 4. 

  1. Place on a roasting tray and cook for 20-25 minutes ensuring that the meat is cooked through. 


Sausage Meat 

  1. Preheat the oven to 180°C / 160°C fan / gas 4. 

  1. Place on a roasting tray and cook for 30-35 minutes ensuring that the meat is cooked through. 


Stuffing Block 

  1. Preheat the oven to 180°C / 160°C fan / gas 4. 

  1. Place on a roasting tray and cook for 30-35 minutes ensuring that the meat is cooked through. 


Christmas Pudding Stuffing 

  1. Preheat the oven to 180°C / 160°C fan / gas 4. 

  1. Place on a roasting tray and cook for 30-35 minutes ensuring that the meat is cooked through. 


Streaky Bacon 

  1. Grill or fry for 2-3 minutes on each side until thoroughly cooked.
