Storage and Prep
Preheat oven to 180. Allow steak to come to room temperature, season well with salt and pepper.
Add some olive oil to a griddle pan and turn up to a medium-high heat. Sear the steak 3-4 minutes on each side.
Place steak on an oven dish and cook for 25 minutes for medium (22-24 mins for rare, 33-38 for well done)
Rest for 10 minutes and slice across the grain to serve.
