Heat a large pan over a medium heat and drizzle in the oil.
Add the leeks and cook for a few minutes before adding the garlic.
Continue to cook for one minute then add the pearl barley, carrots and mustard.
Pour over the chicken stock, season well and simmer for 20 minutes, stirring occasionally.
Toss in the cabbage along with the bacon and cook for a further 5-10 minutes until the cabbage is wilted and tender.
Serve with a dollop of Dijon mustard on the side.
