Ingredients

  • 100g dried quinoa
  • Handful of parsley – roughly chopped
  • 300g fresh tomatoes – diced
  • 100g cucumber – diced
  • 1 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • Zest and juice from ½ lemon
  • 1 tsp. agave
  • ½ garlic clove – crushed
  • Mixed leaves to serve

Method

Step 1

Pop the quinoa on to bubble away according to packet instructions then cool once cooked.

Step 2

Mix together the olive oil, vinegar, lemon juice, agave and garlic.

Step 3

Dress a large serving plate with the mixed salad leaves.

Step 4

Mix together the quinoa, tomato and cucumber along with the salad dressing, then serve on top of the salad leaves.
